Differences in our processes were:
The meal was low in sugar and the recipe was doubled.
WHY?
Me and E.C. doubled the recipe due to our abundance of ripe peaches at hand, but strangely enough this did not work as planned ( see Troubeshooting).
On the brighter side this is one of the least buttery dishes of Paula Dean's and I was making this for my diabetic, high cholesterol mother! That basically means that I mixed both Splenda and sugar equally and actually used 1 cup less sugar than the amount added and it still came out sweet as ever! I actually prefer my cobbler on the less sweet side due its frequent paring with vanilla ice cream.
Troubleshooting:
OK, so yes, I did go with Paula Dean so how in the world could this cobbler NOT taste good you ask? Well, let me not lead you astray it tasted delicious! The only thing I recommend is that when doubling the recipe one should quadruple the amount of peaches used. The cobbler came out with an excess of pastry with a side of peaches. Depending on taste this could either be a good or bad thing, I leave it up to you to decide.
Final Verdict:
This cobbler is a great low sugar desert! It was amazingly easy to make and would be pretty amazing at any dinner or potluck. Pictures will be posted soon!
IT'S NOT MONDAY!!! Lol just wanted to let you know I saw this. You can't get away with anything. Did you ever give us those left overs like you said you were going to? Now I want some peach cobbler...
